Three Nurses Turn Restaurant Dreams into Reality

Talk about pulling double shifts! When Joan Calanog, Jude Canela, and Maricris Dinopol weren't caring for COVID patients at Mount Sinai Hospital, they were busy cooking up something special - their dream Filipino restaurant, Bilao.

What started as a joke during a night shift turned into reality when these three friends noticed a serious lack of authentic Filipino food near New York's major hospitals. "We were really craving Filipino food getting off from work," Canela told Sheinelle Jones in an interview.

Despite the pandemic throwing a curveball at their plans, these nurses-turned-restaurateurs pressed on, knowing their fellow healthcare workers needed good food options. Their strategic location blocks from several major hospitals made Bilao a perfect stop for hungry staff.

The restaurant offered about 40 dishes, including five breakfast items, with crowd favorites like kare-kare (stewed oxtail), lechon kawali (crispy pork belly), and sizzling sisig (pork hash). "It's very fulfilling for me to serve my own countrymen," Dinopol shared. "I take so much pride for bringing Filipino food in this country."

Calanog appreciated how "New Yorkers support our food, our culture - it's very heartwarming." Canela added: "For us to cater our own authentic dishes to the world, it's already an achievement."

While the original Upper East Side location unfortunately closed, the trio hasn't given up their dream. They're planning to relaunch Bilao in a new location soon, continuing their mission to serve both their community and fellow healthcare workers. These nurses prove that with determination and a great recipe, you can keep two demanding careers going - even during a pandemic!
